What is Yacon, and how do I use it?

Yacon is a root vegetable native to the Andes, known for its sweet, crisp texture and high water content. It has a flavour reminiscent of a pear and is often consumed raw in salads or as a snack, but can also be cooked, steamed, boiled or made into a fermented syrup. Yacon is rich in prebiotics (beneficial for digestive health), low in calories and has a low glycemic index which makes it a popular choice for those seeking healthier dietary options. Yacon is ready to harvest in late autumn and can store for up to 4-6 months while maintaining its crisp texture and sweet flavour.

Preparing the Yacon
  1. Wash the yacon root thoroughly to remove any dirt.
  2. Peel off the outer dark brown skin of the yacon to reveal the edible pale-yellow flesh.
  3. Slice, grate, or julienne the yacon to your liking.
  4. Prepare a bowl of water and ice. Submerge the yacon slices into the water and set aside for about 30 minutes. This step is optional but will improve the crisp texture of the yacon if eating it raw.
  5. Drain and remove any excess water. The yacon is ready to eat!
How to store Yacon
  1. For storing yacon, start by gently washing the roots to remove any dirt. Avoid soaking them in water as excess moisture can lead to spoilage.
  2. Wrap each yacon root in a dry paper towel. This helps absorb any excess moisture and keeps the roots dry.
  3. Place the wrapped yacon in a perforated plastic bag or a breathable produce bag. This allows for air circulation while protecting the roots from moisture.
  4. Place the bagged yacon in the crisper drawer of your refrigerator. This area typically has a higher humidity level, which is ideal for root vegetables.
  5. Periodically check the yacon for any signs of spoilage, such as soft spots or mold. Remove any affected pieces to prevent them from affecting the others.
